Espelette pepper: or Ezpeletako Biperra is a spice used as pepper. Imported from America in the sixteenth century, it became an agricultural tradition of the Basque Country. Espelette pepper is recognized worldwide for its character and aromatic richness. It is used at the end of preparation to season meals such as meat, ham, patties or Basque dishes like axoa, piperade or Basque chicken.
Note: It is the only French spice that obtained the valuable PDO (Protected Designation of Origin). In Provence d'Antan, besides being PDO, our Espelette is organic!
